Turkey Bacon and Cheddar Stuffed Peppers
Stuffed peppers are a classic dinner option, and adding turkey bacon to the mix takes them to a whole new level. The smoky flavor of the turkey bacon pairs perfectly with the richness of melted cheddar cheese and the fresh taste of bell peppers.
Ingredients :
4 large bell peppers (any color)
1 cup cooked quinoa or rice
6 slices of oven-baked turkey bacon, chopped
1 cup shredded cheddar cheese
1 small onion, diced
1 cup diced tomatoes (canned or fresh)
1 teaspoon garlic powder
1 teaspoon cumin
Salt and pepper to taste
Fresh cilantro for garnish
Instructions :
- Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, sauté the diced onion until softened. Add the diced tomatoes, cooked quinoa or rice, garlic powder, cumin, salt, and pepper. Stir in the chopped turkey bacon and let the mixture cook for a few minutes.
- Remove the skillet from heat and stir in the shredded cheddar cheese until melted and well combined.
- Stuff each bell pepper with the turkey bacon mixture and place them in a baking dish. Cover the dish with foil and bake for 25-30 minutes, or until the peppers are tender.
- Remove the foil during the last 5 minutes of baking to allow the tops to brown slightly.
- Garnish with fresh cilantro and serve warm.
