Here’s a delicious and hearty Veggie Sausage Casserole recipe that’s perfect for a cozy meal. It’s packed with plant-based sausages, beans, and vegetables in a flavorful tomato sauce. You can tweak it to suit your taste or use up whatever veggies you have on hand.
Ingredients :
6-8 veggie sausages (any plant-based variety you prefer)
1 large onion, chopped
2 garlic cloves, minced
2 carrots, sliced
2 celery stalks, chopped
1 bell pepper (any color), diced
1 zucchini, sliced (optional)
1 can (14 oz) chopped tomatoes
1 can (14 oz) cannellini beans (or any beans of your choice), drained and rinsed
1 cup vegetable broth
2 tbsp tomato paste
1 tsp smoked paprika
1 tsp dried thyme
1 tsp dried oregano
1 bay leaf
2 tbsp olive oil
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions :
- Cook the veggie sausages :
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Cook the veggie sausages until browned on all sides (about 6-8 minutes). Remove and set aside.
- Sauté the vegetables :
In the same pan, add another tablespoon of olive oil.
Sauté the chopped onion, garlic, carrots, celery, and bell pepper until they start to soften, about 5-7 minutes.
- Add the seasonings :
Stir in the smoked paprika, thyme, oregano, and tomato paste. Cook for another minute to release the flavors.
- Add the tomatoes and broth :
Pour in the canned tomatoes, vegetable broth, and add the bay leaf. Stir everything together and bring to a simmer.
- Add beans and sausages :
Add the drained beans and browned sausages back into the pan. Stir gently.
- Simmer :
Reduce the heat to low, cover, and let it simmer for about 20 minutes, stirring occasionally, until the vegetables are tender and the flavors are well combined.

Season with salt and pepper to taste.
