Ingredients :

6-8 veggie sausages (any plant-based variety you prefer)

1 large onion, chopped

2 garlic cloves, minced

2 carrots, sliced

2 celery stalks, chopped

1 bell pepper (any color), diced

1 zucchini, sliced (optional)

1 can (14 oz) chopped tomatoes

1 can (14 oz) cannellini beans (or any beans of your choice), drained and rinsed

1 cup vegetable broth

2 tbsp tomato paste

1 tsp smoked paprika

1 tsp dried thyme

1 tsp dried oregano

1 bay leaf

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions :

  • Cook the veggie sausages :

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Cook the veggie sausages until browned on all sides (about 6-8 minutes). Remove and set aside.

  • Sauté the vegetables :

In the same pan, add another tablespoon of olive oil.
