Ingredients :
For the caramelized apples :
2 medium apples (peeled, cored, and thinly sliced)
2 tablespoons butter
2 tablespoons brown sugar
½ teaspoon ground cinnamon
For the pancake batter :
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¾ cup buttermilk (or milk + 1 tablespoon lemon juice as a substitute)
1 large egg
2 tablespoons melted butter
½ teaspoon vanilla extract
Instructions :
- Prepare the caramelized apples :
Heat a non-stick skillet over medium heat. Add the butter and let it melt.
Stir in the brown sugar and cinnamon, and let it cook for 1-2 minutes.
Add the sliced apples and cook until they are soft and caramelized (about 5 minutes). Set aside.
- Prepare the pancake batter :
