Turkey Bacon and Sweet Potato Hash
A great one-pan meal that combines sweet and savory flavors, this turkey bacon and sweet potato hash is not only easy to make but also packed with nutrients. It’s perfect for a breakfast-for-dinner situation or as a side dish for any main course.
Ingredients :
6 slices of oven-baked turkey bacon, chopped
2 large sweet potatoes, peeled and diced
1 small onion, chopped
1 bell pepper, chopped
2 tablespoons olive oil
1 teaspoon paprika
½ teaspoon garlic powder
Salt and pepper to taste
2-4 eggs (optional)
Fresh parsley for garnish
Instructions :
- Heat the olive oil in a large skillet over medium heat. Add the diced sweet potatoes and cook for 5-7 minutes until they start to soften.
- Add the chopped onion and bell pepper to the skillet and continue to cook until the vegetables are tender and slightly caramelized.
- Stir in the turkey bacon, paprika, garlic powder, salt, and pepper. Cook for another 3-5 minutes until everything is heated through and the flavors meld together.
- (Optional) Crack 2-4 eggs directly into the skillet, cover, and cook for 3-5 minutes or until the eggs are done to your liking.
